She hasn't had the easiest life, especially growing up in one of the poverty-stricken rural areas of Appalachia. She can get defensive if it seems like someone is judging her for things like her accent, her family history, or her appearance. People have done so in the past. She's trying to work on it. Still, Heather assumes that most people think she'll be a problem in some way, so she kind of leans into that impression -- if people seem to be judging her, she will call them out in some fashion (usually with humor).
She may be quick to judge, but she's usually willing to give people another chance if they made her upset. This is especially the case if said person is remorseful. She is also quick to anger at times, but the anger also passes quickly. However... should someone repeatedly upset or hurt Heather, they will eventually run out of chances, and then it's on sight.
